It is next to impossible to prepare for every miniscule possibility of life. The old adage ‘fail to prepare, prepare to fail’ didn’t mention anything about oops moments, common courtesy or social media trends. All of which can have an effect on anything, everything and all that jazz. So, when serendipity, chance, happenstance, fate, divine timing or WTF occurs this is honor of those moments. Plus, ones we kinda sorta had a feeling could be.

Summer ingredients were inspiration for And That Just Happened who we like to call Britney. We mixed corn, tomatoes, peppers and herbs to make our first relish. The combination is savory sweet with just enough bite that makes it a great addition to all meals or just as a dip. Add some Tequila to it for a kick to your soup stock or marinade.
